This recipe from The First Mess looks so outrageously good I had to share! I haven’t tried it yet, but I have my grocery shopping list ready to hit the supermarket tomorrow.
Flavours of Coriander, Cumin and Chilli make up the Sweet Pototo based filling, and lashings of jalepeno sauce and limey cashew cream give it the saucey goodness that all Enchiladas deserve.
